Old Tom Gin is specified for Jerry Thomas' cocktail called the Martinez in his 1887 Bartender's Guide, How to Mix All Kinds of Plain and Fancy Drinks. An early record of it being used in the Tom Collins cocktail was the 1888 book, Harry Johnson's New and Improved Bartender's Manual.Instructions. Mix the gin, lemon juice, simple syrup, and some ice in a shaker. Shake vigorously for 20-30 seconds so that the sugar blends evenly. Strain into an ice-filled highball glass - or Collins glass, if you have it. Top it off with a couple of splashes of club soda. Directions. Fill a cocktail shaker with ice. Pour in the gin, lemon juice, simple syrup and a dash of bitters. Cover and shake until the outside of the container is frosty, about 15 seconds. Strain into a highball glass full of ice. Top off with club soda and garnish with a lemon slice and maraschino cherry.
